after lots of times of research, finally I know the company (not only the person mentioned in the closing credits) who design the host and contestant's screen in the classic era (used until 9 April 2002 in the UK and 27 June 2002 in the U.S.). Possibly some of you have already known that the original computer system designer mentioned on the show was Chris Goss, but maybe only very few people know what company it is. Now I can tell you that it is "G-Graphics", which was merged with Randomaker and TV2GO and now becomes Ionoco. Chris, however, is the Founder and still the CTO of Ionoco (more info can be found here). Other shows using designs from Ionoco include 5th Grader and Million Pound Drop. I still wonder if Ionoco still had the original host screen. If yes, maybe someone here will help me request the graphics from them.

Well, actually Ionoco are still operating the system even to this day and they're mentioned in the credits as well as a company called "IUK System". But Ionoco is mainly used for the wireless voting systems for WWTBAM.
The actual software is edited by a company called Cat & Mouse which is mainly used for the graphics and gameplay mechanics.
Lighting & music are differently operated. Lights are (most likely) controlled using a DMX control scheme. For your question about the graphics etc, forget it. These elements are fully proprietary and nobody who is working for any of these companies are gonna send you anything, that's pretty obvious.
Sorry for the bump of this old thread btw, but I find this kind of info being relevant.
